EU-compliant Organic Matcha (Yabukita Variety - Bulk Ingredient)

Yabukita variety × shade cultivation. EU standard organic matcha raw material with vibrant color, covered aroma, and umami flavor.

This product is an organic matcha raw material that complies with EU standards. It is cultivated and produced in the high mountain regions of China (at an altitude of 500 to 800 meters) using the highly regarded Yabukita variety of Japanese green tea, and processed through a dedicated matcha production process. Thanks to the significant temperature differences between day and night and year-round sunlight management, the tea leaves grow slowly. This results in fresh and tender tea leaves that are rich in amino acids and tea polyphenols, making them suitable for matcha raw material. During the cultivation stage, shading covers are used to promote the formation of aroma and umami components. In the manufacturing process, rapid enzyme deactivation is performed using a three-stage steam steaming machine, which preserves the main components such as chlorophyll and theanine, as well as the vibrant green color. Due to the non-rolling method, there is little off-flavor, and the characteristic seaweed-like aroma and mellow sweetness of matcha are prominent. After refining, ultra-fine grinding is carried out under low-temperature conditions to produce a uniform matcha powder with a particle size of over 800 mesh. This organic matcha raw material excels in solubility and suspension, making it suitable for a wide range of applications from daily consumption to commercial tea beverages.

Commercial-grade matcha ingredients for confectionery and baking (oven-compatible grade)

Stable color and aroma even after baking. High cost-performance matcha ingredients optimized for confectionery and bakery production.

This product is a commercial-grade matcha ingredient developed for use in confectionery and bakery applications. It aims to suppress color changes and flavor degradation during the baking process, while maintaining the original green color and tea flavor of matcha even after heating, by optimizing everything from raw material selection to grinding conditions. The raw tea leaves are blended from multiple varieties, including Chinese Jiu Keng, small-leaf Fuding, and Chunbo green, tailored for different applications. It achieves a prominent matcha flavor after baking while suppressing excessive astringency. The non-rolling processing and ultra-fine grinding under low-temperature management provide excellent dispersibility in dough, cream, and fat-based materials, making it easy to handle during the manufacturing process. It is mainly used as an ingredient for processed products such as baked goods, bread, biscuits, cakes, and matcha-flavored confections, and is adopted by many food manufacturers and OEM factories. Due to its stable supply and lot compatibility, it is suitable for continuous production and large-scale manufacturing of matcha products.
